Where the ranch is
Circle 7 Ranch sits at the southern end of the Sanpete Valley in Mt. Pleasant, Utah (population 3,200, elevation 5,925 feet). The valley runs between the Wasatch Plateau to the east and the San Pitch Mountains to the west. Cold winters, dry summers, and dryland alfalfa-rich forage make this some of the best small-herd cattle country in the Intermountain West. It's also why Mt. Pleasant has been ranching country since the 1860s.
The Wagyu we raise
F1 Wagyu Cross. First-generation cross. A Japanese Wagyu sire bred to a Black Angus dam. You get the intramuscular marbling that defines Wagyu, layered onto the carcass size and beef-forward flavor of American Angus. Marbling target BMS 6-8. Available as individual cuts (bone-in ribeye $32/lb) or whole/half animal shares (March 2027 launch window).
Full-Blood Wagyu. Both sire and dam are 100% Wagyu genetics, traceable to Japanese bloodlines. Finished 600+ days, target BMS 8 and above. Limited release. Tomahawk $58/lb, ribeye from $48/lb.

Why "Utah Wagyu" matters as a category
Most American Wagyu sold DTC comes from multi-ranch operations sourcing across Idaho, Oregon, Washington, and Texas. The genetics get blended; the ranches get aggregated; the story gets sanded down. Single-ranch wagyu in Utah is rare. The combination of high-elevation dryland forage, cold-winter finishing, and small-herd handling produces a measurably different finishing profile than the lower-elevation Snake River Plain ranches. Different fat color, different finishing curve, different flavor.
USDA inspection at BarW Custom Meats, Nephi
Every Circle 7 animal is processed under USDA inspection at BarW Custom Meats in Nephi, Utah (40 minutes from the ranch). BarW is a small regional facility with low-stress handling protocols and the same head butchers cutting our beef every week. The short transit matters because cortisol-elevated pH from stress shows up in the meat as lower marbling expression and tougher steaks. We chose BarW because their floor is calm.

Within Utah, we ship cold-chain 2-day from our Colorado City, Arizona packing facility. UPS and FedEx both serve every Utah ZIP code. Salt Lake City, Provo, Ogden, St. George, Cedar City, Logan, Vernal, Park City, all 2-day. Free shipping over $200. Local pickup at the ranch is available for whole and half share customers in the Aug 15, 2026 harvest window.

FAQs about Utah Wagyu
Is "Utah Wagyu" a recognized label?
No. "Wagyu" is a genetic category (the four Japanese cattle breeds). "Utah Wagyu" is our shorthand for "Wagyu genetics raised on a Utah ranch." We use F1 (first-cross Japanese Wagyu x Black Angus) and Full-Blood (registered 100% Wagyu) genetics.
Is this the same as Snake River Farms?
No. SRF is an Agri Beef brand based in Boise, Idaho. They source across multiple ranches. We're a single ranch in Mt. Pleasant, Utah. See our honest comparison.
How does Utah Wagyu taste different from Idaho or Texas Wagyu?
Elevation and forage. Dryland alfalfa-rich Utah grazing combined with high-elevation cold-winter finishing produces a slightly firmer fat with a different oleic acid expression than lower-elevation finishing climates. Side-by-side, the difference is real but subtle.
