Why Bone-In Ribeye Deserves Reverse-Sear

A wet brine has no place near a premium ribeye. The dry brine is non-negotiable, and 48 hours is the target. Here is the science: kosher salt pulls moisture to the surface in the first few hours, dissolves into a concentrated brine, then gets reabsorbed into the meat over the next 24 to 48 hours. The salt denatures muscle proteins, which improves moisture retention during cooking and seasons the steak from the inside out instead of just the surface.

The salt math. Use Diamond Crystal kosher salt at 0.75 percent of the steak’s weight, or Morton kosher salt at 0.5 percent. For a 24-ounce bone-in ribeye, that is roughly 5 grams of Diamond Crystal or 3.5 grams of Morton. A digital kitchen scale gets this right every time. Eyeballing it does not.

Apply the salt to all surfaces, including the bone side and the fat cap. Set the steak on a wire rack over a sheet pan and refrigerate uncovered. The open-air refrigeration is the part most home cooks skip, and it is the difference between a good crust and a great one. Cold refrigerator air dries the surface of the steak so it sears immediately on contact with hot cast iron instead of steaming for the first 30 seconds.

Equipment You’ll Need

  • Cast iron skillet, 10 or 12 inch, well-seasoned
  • Sheet pan with a wire rack that fits inside it
  • Instant-read digital thermometer, ThermoWorks Thermapen or equivalent
  • Leave-in probe thermometer for the oven phase (optional but recommended)
  • Long tongs, not a fork
  • Kitchen towel or paper towels for the cast iron handle, which will be 600F-plus
  • High-smoke-point oil, refined avocado or beef tallow
  • Compound butter, recipe below

The thermometer is the single most important tool. Reverse-sear is a temperature-driven technique, not a time-driven one. You cannot eyeball the pull temperature on a 2-inch ribeye. ThermoWorks publishes the accuracy specs on their probes for a reason.

Step 1: Salt and Refrigerate Open

Pat the bone-in ribeye dry with paper towels. Weigh it, calculate your kosher salt at 0.75 percent of total weight (Diamond Crystal), and apply evenly to all surfaces. Place the steak on a wire rack set over a sheet pan. Refrigerate uncovered for 48 hours.

Do not cover it. Do not wrap it. The open refrigeration is what dries the surface and concentrates the flavor. If your refrigerator has strong odors from other food, that is a separate problem to solve before brining.

Step 2: Bring to Room Temp

Remove the steak from the refrigerator 60 to 90 minutes before cooking. Leave it on the rack, uncovered, on the counter. The surface should feel dry, almost tacky, and the meat should no longer feel fridge-cold to the touch.

This step shortens the oven phase and improves the temperature evenness from edge to center. Tempering is not a food safety risk at 60 to 90 minutes in a 70F kitchen. The USDA FSIS guidance on raw beef holding refers to extended periods above 40F, not a structured temper window.

Step 3: Slow Oven at 225F

Set a target pull temperature of 115F. For a 2-inch bone-in ribeye, this takes approximately 35 to 50 minutes depending on starting temperature, oven calibration, and steak weight. Do not flip during the oven phase. The wire rack lets convection circulate around the steak so both sides cook evenly.

Step 4: Pull at 115F

Pull the steak when the internal temperature hits 115F for medium rare final. The temperature will rise during the rest and finishing sear, landing at 130F to 132F in the center, which is the textbook medium rare range. For medium, pull at 120F.

While the steak comes out of the oven, set your cast iron skillet over high heat and let it preheat for 5 to 7 full minutes. The pan should be smoking lightly. A drop of water should evaporate on contact within a second.

This is where the steak internal temperature chart becomes a permanent kitchen reference. Reverse-sear pull temperatures sit 10 to 15 degrees lower than traditional pan-sear pull temperatures because the final sear adds real heat.

Step 5: Hot Sear in Cast Iron

Add one tablespoon of refined avocado oil or beef tallow to the screaming-hot cast iron. The oil should shimmer and barely smoke within 5 seconds. Place the steak in the pan and do not move it for 45 seconds.

The Maillard reaction, the chemical browning that creates steakhouse crust, requires surface temperatures above 300F and dry meat. Both conditions are now met because of the open refrigeration in step 1 and the screaming pan in step 4. Research published in the Journal of Food Science confirms that the rate and depth of Maillard browning increase exponentially with surface temperature above 280F.

Flip with tongs. Sear the second side for 45 seconds. Stand the steak on its fat cap using the bone as a handle and sear the fat cap for 30 seconds. Total sear time should be under 2.5 minutes. Any longer and you have overshot medium rare on a steak you spent 48 hours dry brining.

Step 6: Compound Butter Baste

In the final 30 seconds of the sear, drop two tablespoons of compound butter into the pan. Tilt the skillet toward you, spoon the foaming butter over the top of the steak continuously, and let the butter brown without burning. Garlic, thyme, and rosemary in the butter aromatize directly into the meat.

Basic compound butter: 4 tablespoons unsalted butter, 2 cloves garlic crushed, 4 sprigs thyme, 2 sprigs rosemary, a pinch of flaky sea salt. Mix in advance, refrigerate, and pull out the portion you need. Full recipe in our compound butter guide.

Step 7: Rest 5 Minutes

Transfer the steak to a cutting board with a juice groove. Tent loosely with foil. Rest for 5 minutes minimum, 8 minutes for very thick cuts.

Resting allows muscle fibers to relax and reabsorb liquid that migrated toward the surface during cooking. Cook’s Illustrated testing has measured the moisture-loss difference at roughly 12 percent between rested and unrested steaks of equivalent weight. That is the difference between a juicy slice and a puddle on the board.

6 Common Mistakes

  1. Skipping the dry brine. The 48-hour dry brine is the single biggest variable separating a steakhouse ribeye from a home ribeye. Wet brining a ribeye is worse than no brine at all.
  2. Covering the steak in the refrigerator. The surface needs to dry. Plastic wrap or a container traps moisture and you lose the crust.
  3. Using a pan that is not hot enough. If the steak is not screaming the moment it hits the cast iron, the sear is already lost.
  4. Flipping too often during the sear. One flip. Tongs, not a fork. The Maillard reaction needs sustained contact time on each face.
  5. Cutting too soon. A 5-minute rest is the floor. Cut early and the juice runs out onto the board.
  6. Overshooting the pull temperature. Reverse-sear forgives almost everything except pulling at 130F when you meant 115F. The sear adds 15 degrees no matter what.

Pairing Recommendations

A bone-in ribeye at this quality does not need much around it. A simple wedge of iceberg with blue cheese and bacon, a baked potato with butter and chives, or roasted asparagus with lemon and shaved Parmesan. Anything more complicated competes with the steak.

Does the bone actually add flavor or is that a myth? The bone does not transfer significant flavor into the muscle during a 45-minute cook. Is reverse-sear safe under USDA guidance? Yes for whole-muscle beef from inspected processors. USDA FSIS guidance treats whole-muscle cuts differently than ground beef because pathogens are confined to the surface. The cast iron sear well exceeds surface pasteurization temperatures. What is the difference between Wagyu Cross and Full Blood Wagyu for this method? The method works for both. Can I do this without a cast iron pan? Carbon steel works equally well. Stainless steel works but produces less aggressive browning.
