Dry-Brine vs Wet-Brine: Which Method Wins for Steak, Pork Chops, and Roasts
Salt is the single most important variable between a steak that disappoints and one that gets remembered. The question is not whether to brine. The question is which brine, on which cut, for how long, and at what ratio. Wet-brine submerges the meat in saltwater. Dry-brine salts the surface and lets time do the work. They produce different proteins, different crusts, different juiciness profiles. Below is the working playbook we hand to customers who buy a Wagyu Cross bone-in ribeye or a stack of heritage pork chops and want to cook them once, correctly.
What Brining Actually Does
Brining is a salt-driven chemistry problem with three stacked effects: osmosis, protein denaturation, and water retention.
Salt on or around meat first creates an osmotic gradient. Water exits the muscle cells toward the higher salt concentration on the surface. Within a window of minutes to a few hours, that water re-equilibrates and is reabsorbed back into the muscle, now carrying dissolved salt with it. This is the part most cooks miss. The early “wet surface” of a dry brine is not failure. It is phase one.
Phase two is denaturation. Salt destabilizes the structure of myosin and other muscle proteins. The tight protein strands loosen and partially unwind. According to research summarized by Cook’s Illustrated and the food science work of Harold McGee in On Food and Cooking, denatured proteins hold onto water far more effectively during heat exposure, which is why salted meat loses less moisture during cooking than unsalted meat (McGee, On Food and Cooking, 2004).
Phase three is water retention at the grill or pan. A properly brined steak loses roughly 15 to 20 percent less moisture during high-heat cooking compared to an unsalted control, per the testing published by America’s Test Kitchen (americastestkitchen.com). That difference is the entire reason brining exists.
Three effects, one ingredient. Salt does the work.
Wet-Brine Mechanics
A wet-brine is a saltwater solution, sometimes with sugar and aromatics, in which the meat is fully submerged for a defined window. The mechanism is straightforward. Salt dissolved in water diffuses into the muscle. Water follows. The meat gains weight, typically 6 to 10 percent, depending on cut and duration.
The advantage is moisture insurance. A wet-brined pork chop or chicken breast carries more total water into the cook, which gives the cook a wider margin of error on temperature. The downside is the same thing. Extra water in the muscle dilutes flavor and makes a crisp sear harder to achieve, because surface moisture has to evaporate before browning starts.
Wet-brines are best when the cut is lean, prone to overcooking, and not relying on a dark seared crust as the headline feature. Think bone-in pork chops, whole chickens, turkey breasts, and pork tenderloin.
Dry-Brine Mechanics
A dry-brine is salt applied directly to the surface of the meat, then rested uncovered (or loosely covered) in the refrigerator. No water is added. The meat itself supplies the moisture.
In the first 30 to 60 minutes, salt pulls water out of the muscle to the surface. The meat looks wet. If you cook at this stage, you will produce a steamed, gray exterior. This is the most common dry-brine mistake.
After roughly 2 hours, that surface water has dissolved the salt and begins reabsorbing back into the muscle. By the 12 to 24 hour mark on a thick steak, the surface is dry to the touch, the salt has migrated deep into the cut, and the proteins are denatured and primed to hold water during the sear.
The result is concentrated beef flavor, a dry surface that browns aggressively the moment it hits a hot pan or grill, and a crust that is impossible to replicate any other way. This is why a dry-brine wins on steak.

When Wet-Brine Wins
Wet-brine is the right tool when the cut has two characteristics: it is lean enough to dry out at finished temperature, and the surface is not the headline.
The clearest wins:
- Whole poultry and turkey breast. Lean white meat at 160 to 165 F is a hairline margin. Saltwater submersion gives that margin a buffer.
- Heritage pork chops. Pork loin chops carry less intramuscular fat than commodity pork. A 6 to 8 hour wet-brine drops the failure rate to near zero. Circle 7’s heritage pork chops come from Berkshire and Berkshire-cross hogs with better fat than commodity pork, but they still respond beautifully to wet-brine.
- Pork tenderloin. The leanest pork cut on the carcass. Wet-brine it.
- Brined-then-smoked applications. Pastrami, smoked turkey, brined pork shoulder. The wet-brine carries flavor compounds (peppercorn, juniper, bay, garlic) deep into the cut in ways dry-brine cannot match.
If you are cooking heritage pork chops for a dinner where reliability matters more than the deepest possible crust, wet-brine.
When Dry-Brine Wins
Dry-brine wins on steak. Specifically, it wins on every steak Circle 7 sells.
Why: the headline of a steak is the crust and the concentrated beef flavor. Wet-brine dilutes both. Dry-brine concentrates both.
The clearest wins:
- Ribeye. Marbling needs heat to render. A dry surface delivers harder heat. The Wagyu Cross bone-in ribeye responds to a 24 to 48 hour dry-brine the way a sponge responds to water. The fat caps render cleaner. The crust forms in under 90 seconds per side.
- Prime rib and standing rib roast. The classic application. 48 to 72 hours uncovered on a rack in the refrigerator. The exterior becomes almost jerky-like, then transforms into the deepest crust of your life under high heat.
- Tomahawk and cowboy cut. Thick cuts (2 inches plus) need the deep salt migration only time can give. A 6-hour dry-brine on a tomahawk is wasted. 36 hours is the minimum.
- Strip, porterhouse, T-bone. Same logic. Dry-brine, uncovered, 24 hours.
- Bone-in chuck steaks and hanger steaks. Dry-brine concentrates the deep beef flavor these cuts already carry.
Steakhouses figured this out 60 years ago. We will get to that.
Salt-to-Water Ratio for Wet Brine
The canonical wet-brine ratio is 1 cup of kosher salt per 1 gallon of water. This delivers roughly a 5 to 6 percent salinity solution, which is the working window food scientists at Modernist Cuisine identified as the sweet spot for protein hydration without making the meat taste salty (Modernist Cuisine, Volume 3, 2011).
Two important calibration notes:
- Salt brand matters. Diamond Crystal kosher salt and Morton kosher salt have different crystal densities. 1 cup of Diamond Crystal weighs 5 ounces. 1 cup of Morton kosher weighs 8 ounces. If you use Morton, use 2/3 cup per gallon, not 1 cup. If you use Diamond Crystal, use the full cup. Cook’s Illustrated confirmed this discrepancy in repeat testing (cooksillustrated.com).
- Sugar is optional, not required. A 50/50 sugar-to-salt ratio (1/2 cup each per gallon) is the standard for pork and poultry where browning is a goal. The sugar accelerates Maillard reactions at the surface.

Dissolve salt and sugar in 1 quart of hot water, then add the remaining cold water and ice to bring the brine to refrigerator temperature before adding meat. Meat must brine at 38 F or below. Above 40 F is a food safety failure.
Salt-Per-Pound Math for Dry Brine
Dry-brine math is simpler. Apply 1/2 teaspoon of Diamond Crystal kosher salt per pound of meat, or 1/4 teaspoon of Morton kosher salt per pound, for thin cuts. For thick steaks and roasts where the salt has to travel deeper, push to 3/4 teaspoon Diamond Crystal or 1/2 teaspoon Morton per pound.
For a 1.5 pound bone-in ribeye, that is roughly 3/4 teaspoon to 1 teaspoon Diamond Crystal kosher salt. Applied evenly to all surfaces, including the side ribbons of fat.

Use a measuring spoon. Eyeballing it is the second most common dry-brine mistake. Too little salt and the brine does nothing. Too much and the meat tastes like cured ham.

Time is the variable most cooks get wrong. Underbrined meat tastes flat. Overbrined meat tastes cured.

Refrigerator: Open vs Sealed for Dry-Brine
Open, on a wire rack, every time. Sealed in plastic defeats the second half of the mechanism.
The reason: after the salt reabsorbs in hour 4 to 12, the surface needs to dry. A dry surface is the entire point. Air circulation across an uncovered wire rack pulls residual moisture off the surface. By hour 24 the steak looks almost mummified. That is exactly what you want. That dry surface is what produces the dark, crackling crust the second the steak hits the pan.
Setup: a half sheet pan, a wire cooling rack across it, meat on the rack with at least an inch of clearance around each piece. Place on the top shelf of the refrigerator where airflow is best. No plastic wrap. No covering.
If your household refrigerator carries strong odors (fish, cut onion, leftover takeout), tent loosely with parchment, not plastic. Never seal.
Common Mistakes
Watch for these. Most failures collapse into one of six categories.
- Brining at room temperature. Above 40 F is a bacterial growth window. Always brine at refrigerator temperature. If you are wet-brining a turkey and lack fridge space, use a cooler with food-safe ice packs and monitor with a thermometer.
- Wrong salt, same volume. Substituting Morton for Diamond Crystal cup for cup will over-salt by 60 percent. Weigh, or convert.
- Cooking at the wet-surface phase of a dry-brine. Hours 1 to 3 are the worst time to cook. Wait at least 12 hours on a thick steak.
- Wet-brining a well-marbled steak. A wet-brined ribeye loses the very thing the marbling was supposed to give you. Concentrated beef flavor. Do not.
- Adding salt to the wet-brine and to a finishing rub. The brine already salted the interior. The rub double-seasons and the result tastes like cured meat. If you brined, your finishing rub should be pepper and aromatics, not salt.
- Rinsing after dry-brine. Do not. The whole point was to dry the surface. Rinsing reintroduces moisture and washes the surface flavor compounds away. Pat any visible moisture if needed, but no water.
Why Steakhouses Use Dry-Brine
Walk into any steakhouse with a reputation. Peter Luger, Wolfgang’s, Bern’s, Cote, Bavette’s, St. Anselm. Their walk-ins are stacked with dry-aged primals on wire racks, uncovered. The cuts are seasoned days in advance and rested on perforated trays. None of them are wet-brining a porterhouse.
There are three operational reasons:
- Crust is the product. A steakhouse sells the sear. Dry-brine maximizes sear potential. Wet-brine compromises it.
- Inventory math. Dry-brining 60 steaks a day takes one sheet pan rack per cut. Wet-brining the same volume takes 15 gallons of liquid and a dedicated reach-in. Space is money.
- Flavor concentration. A dry-brined ribeye tastes more like beef. A wet-brined ribeye tastes like wet beef. Steakhouses are selling the first.
J. Kenji Lopez-Alt’s testing at Serious Eats reached the same conclusion in repeated head-to-head trials (seriouseats.com): for steak, dry-brine is the only correct answer.
Recipe: Dry-Brine for Ribeye
Tested on the Wagyu Cross bone-in ribeye. Works identically on any well-marbled bone-in or boneless ribeye.
Ingredients:
- 1 bone-in ribeye, 1.25 to 1.75 lb, roughly 1.5 inches thick
- 1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon Morton kosher)
- Optional: fresh cracked black pepper, applied just before cooking
- Optional: 1 small sprig fresh rosemary, applied during final basting
Method:
- Remove the ribeye from packaging. Pat completely dry with paper towels.
- Apply salt evenly to every surface, including the fat cap and the side ribbons. Light pressure to adhere.
- Place on a wire rack set over a sheet pan. Top shelf of refrigerator. Uncovered.
- Hold 24 to 36 hours. Do not cover. Do not touch.
- Pull from refrigerator 45 minutes before cooking. Temper at room temperature.
- Heat cast iron or carbon steel pan to ripping hot. Add high smoke point oil (avocado, refined sunflower).
- Sear 90 seconds per side. Stand on the fat cap for 60 seconds to render. Add 2 tbsp butter, rosemary, smashed garlic clove. Baste 60 seconds.
- Pull at 125 F internal for medium rare. Rest 8 to 10 minutes on a warm plate.
- Slice against the grain. Finish with cracked pepper and flaky salt if desired.
Recipe: Wet-Brine for Pork Chops
Tested on Circle 7’s heritage pork chops, bone-in, 1.25 inches thick.
Brine ingredients:
- 1 quart cold water (1 cup hot, 3 cups cold or ice)
- 1/4 cup Diamond Crystal kosher salt (or 2 1/2 tbsp Morton kosher)
- 2 tablespoons brown sugar
- 1 tablespoon black peppercorns
- 2 bay leaves
- 3 cloves garlic, smashed
- 1 sprig fresh thyme
Method:
- Dissolve salt and brown sugar in 1 cup hot water. Add peppercorns, bay, garlic, thyme.
- Add 3 cups cold water (or 2 cups cold water plus 1 cup ice) to drop temperature to refrigerator-cold.
- Submerge 2 to 4 heritage pork chops fully. Weight with a plate if they float.
- Refrigerate 6 to 8 hours. Not longer than 12.
- Remove chops. Discard brine. Pat completely dry with paper towels.
- Air-dry on a rack in the refrigerator for 30 to 60 minutes to allow surface to dehydrate before searing.
- Heat heavy skillet. Sear 3 minutes per side, finish in 400 F oven to 140 F internal.
- Rest 8 minutes. Carry-over brings final temperature to 145 F.

8. Does dry-brining work on frozen meat? No. Thaw fully in the refrigerator first. Salt cannot migrate through ice crystals. Once thawed, pat dry and begin the brine clock.
